Roasted White Bean Hummus

I made this for a holiday party some years ago- it was one of the first recipes I posted here– and then didn’t make it again even though several people had asked me for the recipe. It originally came from Martha Stewart’s Clean Slate cookbook and has since been removed from the link I had posted. Here’s the recipe again, adjusted to make a larger amount. I mean, really, why wouldn’t you just make more if you’re going through the effort to roast those beets…

2 beets roasted (pop them into the oven, right on the rack, for about an hour at 425 degrees), rub/peel off as much skin as you can

1 can Great Northern Beans, drained and rinsed

4 tablespoons fresh lemon juice

2 tablespoons olive oil

powdered garlic, as desired

salt and pepper, as desired

Puree until desired consistency is achieved. Makes approximately 3 cups. Serve with crackers and/or vegetables.
